LEGUMES HUNGARY LIVING LAB
Through our European projects focusing on legumes in recent years (TRUE, DIVINFOOD, legumES), we have created a multi-stakeholder network connecting farmers, restaurants, chefs, food bloggers, seed traders and breeders, consumer organizations, and public caterers. This community now operates as a Living Lab, bringing together players in the domestic legume value chain.
Integration of the stakeholders of Hungary’s legumes value chain
The aim of the Living Lab is to promote the cultivation and consumption of legumes in Hungary: it supports farmers from seed procurement through the sharing of cultivation technology knowledge to market access, encourages chefs and consumers to use legumes on a daily basis, and creates regular meeting points for stakeholders in the form of events and workshops.
The focus of our network is, of course, on producers – we currently work with 17 horticultural and arable farmers who grow for instancechickpeas, lentils, peas, cowpeas, yardlong beans, faba beans, grass pea and edamame. Our partners in reaching consumers and promoting legumes include restaurants in Budapest and the countryside, Stílusos Vidéki Éttermiség, Farm2Fork, the Association of Conscious Consumers, and the Municipality of Budapest.
The Living Lab has been a member of the Agroecology Network of Living Labs since 2025.
